Why do we need to tip servers/waiters etc?

I get annoyed at my boyfriend who over tips. I am frugal and I will under tip. I guess in the US servers dont make as much, but yes I agree then find another job to make bank. If you are already paying for the food and drink, tipping seems excessive to those who don't have a lot of money to throw around (does that mean that we shouldn't eat out?).
